Yesterday we got together with my Husband’s family for Easter Sunday.
We were asked to bring the dessert. I decided to bake a pavlova for a change (as pav bases are naturally gluten and dairy free anyway).
A Simple Pavlova Base
4 egg whites
1 cup caster sugar
2 teaspoons cornflour
1/2 teaspoon vanilla
1 teaspoon vinegar
* Preheat oven to 200 degrees C.
* Beat egg whites vigorously while gradually adding in sugar. It will take approximately 15 to 20 minutes for the mixture to firm (to hold shape).
* Fold in cornflour then add vanilla and vinegar. Mix lightly.
* Wet a cooking tray with cold water then spread mixture to form a shell.
* Turn oven down to 125 degrees C and cook for an hour and 15 minutes.
* Once cooled top with coconut cream (dairy free).
* Add some cut up fruit (strawberries and kiwifruit is tradition) then drizzle over passion fruit.

You inspired me on this one Sahrn. I did a bunch of mini pavlova’s for dessert this evening (but used dairy cream) and fresh, home made custard … divine!

Sounds lovely, like a merengue. I’ve never heard of a pavlova before~ it is an Australian specialty?

P.S. Deb my gorgeous Kiwi friend. Julie (another commenter) is also a Kiwi. Notice her lovely comment – no mention at all to this ongoing stupid Kiwi / Ozzie debate. For the record I have always believed Kiwis invented the Pav.

Ohhhhh no Kristen you have unknowingly asked a very sensitive, loaded question. A huge ‘debate’ between two neighbouring Countries have gone on for years. Never never ask the origin of pavlova, Far Lap or Crowded House but Australians are now happy to admit Russell Crowell is New Zealand (NZ you can have him back). It is all friendly – sort of.

No Kristen it is us (Australia and New Zealand) who are sorry. We have a long history of carrying on like naughty children. If you ever want to have fun in future, you remember those questions to ask of New Zealanders and Australians (for amplified fun both need to be present to hear the question).

Ooh, my absolute fav! Great choice. Pavs just aren’t the same without passionfruit though (don’t you think?) and passionfruit are almost impossible to find here. Sigh. Glad you had a nice Easter 🙂

Can you buy passion fruit pulp in a tin in the USA? If not I wonder if customs would allow me to send you some passion fruit tins over to you?

Not that I’ve ever seen. Mum used to send me the tins you’re thinking of but we haven’t done that for a while. Maybe I should just come home for a visit. It’s been nearly 10 years now 😦
