Gluten and Dairy Free Rhubarb Muffins

I’ll be honest, I had no idea what to do with the huge bundle of freshly picked rhubarb my next door neighbour gave me.

I froze half (you can freeze rhubarb but when it’s defrosted it becomes more fibres). With the other half I started experimenting, attempting to come up with a good gluten and dairy free rhubarb muffin receipe.

With no further ado, here is my receipe (the winner of my experiments) for gluten and dairy free rhubarb muffins.

2 cups raw sugar
2/3 cup vegetable oil
1 egg
1 teaspoon vanilla essence
2 3/4 cups gluten free plain flour
1 teaspoon salt
1 teaspoon bicarb soda
1 cup rice milk
185g rhubarb
1/2 cup whole almonds

* Preheat oven to 180 degrees C.

* In a bowl beat raw sugar, oil, egg and vanilla together.

* In another bowl sift flour and then add salt and bicarb soda. Add to sugar mixture alternately with rice milk. Stir till everything is totally mixed.

* Using a food processor mix rhubarb and almonds only till they become a coarse texture. Add to mixture and stir well.

* Place muffin paper cups onto an oven tray (I like to make them double thickness).

* Pour mixture into each muffin cup.

* Bake in the oven for 30 to 35 minutes.

Makes approximately 20 muffins.

  1. Have you ever made rhubarb and strawberry jam? OMG it is my favourite. The tartness of the rhubarb complements the super sweet of the strawberries and sugar so that it is nicely balanced. Perfect use for your frozen rhubarb. Yum!
    Interesting that you are using gluten free/dairy free recipes. We were GFCF for a really long time. Muffins were always a staple at our house. Glad you found a recipe that works!

    • Yes I’m gluten and dairy intolerant, vegetarian and on a diabetic diet (at this stage I will eat a little free range chicken and sustainable fish but in time perhaps I won’t). Ironically I eat better now than I ever did. Rhubarb and strawberry jam sounds wonderful – have you ever written a post about it?

      • Gosh, that’s a lot of dietary restrictions but I can understand how you must eat much more clean these days. Hope it helps you feel better, I know it can be a lot of work to keep up with.
        I haven’t written a post about strawberry rhubarb jam but it really is my fav so I have grand plans for May when it is strawberry season over here. I only ever use conventional frozen rhubarb though as I can’t ever get fresh strawbs and fresh rhubarb at the same time. Very envious of you and your rhubarb growing neighbours 🙂

      • Another example of how much we take for granted i.e. rhubarb growing abundantly that neighbours have plenty to share. Tonight I made muffins with mango and peaches (so they didn’t go to waste). Reading your blog GreenEggs and others who are snowed in makes me appreciate the sun and even the simple joy of being able to get outside.
