Cooking Up a Storm

Decided to make my roasted tomato and vegetable pasta sauce in bulk today.

Filled a 500g glass jar…

…and a medium sized plastic storage container (as well as made tonight’s dinner with it).

The jar will be placed in the fridge and will keep up to a fortnight  – hence the ‘cooked date’ note.

The plastic container will preserve my sauce for up to 6 months in the freezer.

The glass jar was sterilised before hand by placing the jar and lid in a preheated oven at 120 degrees C, for 20 minutes.  Make sure lids are not plastic (otherwise you will have a melted goo in your oven).  Of course make sure the jar and lid is clean beforehand.

You can also sterilise jars in the dishwasher by using the hottest cycle.  Plastic jar lids can be sterilised using this method.

Now I have my pasta sauce on hand to make a quick pasta, pizza or lasagna for future dinners.
